Roasted Tomatillo Salsa for #CincodeMayo

Happy Cinco de Mayo! Living in Texas, Mexican food is a regular dinner… it’s fun to share these bold and exciting flavors with everyone today!

If you are looking for something to jazz up your Cinco de Mayo plate, there’s still plenty of time to make a delicious homemade salsa! Once you make your own, you’ll feel silly ever find out of a jar. At least that’s how I felt the first time I made it šŸ™‚

This this roasted tomatillo salsa is so delicious, and a spin on the regular tomato salsa you usually eat with chips. Taking the extra few minutes to roast the tomatillos onion and jalapenos under the broiler makes a big difference. It’s so tasty!

I first made it as a Christmas gift for a coworker I was diabetic. I usually give out baked goods, but I was in a phase of my life where I was really into canning. Lucky for me red and green salsa are ideal for canning to eat at a later date. The day after she received her gift, my co-workers came to me and said her family love the salsa.… And that it was all gone! I made sure my next batch with all in larger jars!

Cindy’s Roasted Tomatillo Salsa

It includes instruction for canning, if that’s your thing. You can also store in a jar in the fridge for months. But I doubt it will last that long.
