This this roasted tomatillo salsa is so delicious, and a spin on the regular tomato salsa you usually eat with chips. Taking the extra few minutes to roast the tomatillos onion and jalapenos under the broiler makes a big difference. It’s so tasty!
I first made it as a Christmas gift for a coworker I was diabetic. I usually give out baked goods, but I was in a phase of my life where I was really into canning. Lucky for me red and green salsa are ideal for canning to eat at a later date. The day after she received her gift, my co-workers came to me and said her family love the salsa.ā¦ And that it was all gone! I made sure my next batch with all in larger jars!

Cindy’s Roasted Tomatillo Salsa
It includes instruction for canning, if that’s your thing. You can also store in a jar in the fridge for months. But I doubt it will last that long.
