Playing in the Kitchen: Evil Muddy Buddies

January 22, 2009 by Cindy Leave a Comment

Evil, just pure evil. Why? Because they are DELICIOUS, super-easy to make with ingredients you probably already have in your pantry, there is very little clean up… oh dear, one must be careful. Maybe I should have titled this How NOT to loose weight before the Wedding… 😀

The Original Recipe:

Ingredients
9 cups Chex Cereal
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Preparation Directions
1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

I halved the recipe… to keep it to a respectable amount for one (I am a monument of self-control, but why tempt myself :P) … and also, WHO has a 2 GALLON ZIP TOP BAG in their pantry… thats just not normal. Everyone has gallon sized ones.
For those who dont want to do the math, here you go:

Ingredients
4 1/2 cups Chex Cereal
1/2 cup semisweet chocolate chips
1/4 cup peanut butter
1/8 cup butter or margarine (same as 2 Tbls)
1/2 teaspoon vanilla
3/4 cup powdered sugar

This makes just the right amount to spread out on a wax-paper lined cookie sheet.

Technically, one serving is 1/2 cup of Evil Muddy Buddies. So this 1/2 recipe should be making 9 servings (though in my world, it turns out to be only like 3 or 4 servings, oops). Each 1/2 cup servings contains Calories 220 (Calories from Fat 80); Total Fat 9g (Saturated Fat 4g, Trans Fat 0g); Cholesterol 5mg; Sodium 200mg; Total Carbohydrate 30g (Dietary Fiber 1g, Sugars 17g); Protein 3g
